Developing UK policy on shiga-toxin producing E-coli (STEC) will be in the spotlight at this years AHDB Beef Lamb Processor Conference.

Food Standards Agency (FSA) head of food hygiene policy, Linden Jack, will give a presentation on the subject at the conference on February 25 near Stratford, Warwickshire.

The presentation will discuss development of EU guidance and how the FSA is working with Government and stakeholders to agree risk management approaches to STEC.

The conference will include an overview of beef food standard controls in the US by Dr Kenneth Petersen, senior vice president, quality and regulatory affairs, OSI Group. Delegates will also hear about AHDB Beef Lamb’s new cut development work, which is adding value to the carcase, before sampling some of the cuts during lunch.

Both data exchange and the environmental footprint of products in the meat industry will be under the spotlight, with presentations from key AHDB Beef Lamb team members.

Dr Phil Hadley, AHDB Beef Lamb head of global supply chain development, said: “Risk management in the meat supply chain is an important area for research and industry discussion. Our conference provides the ideal forum for debate on this and other key issues affecting the supply chain in our sector and I would encourage any stakeholders with an interest to register to attend.”

A question and answer session will be held at the end of both the morning and afternoon sessions.
